Processing and origin:

The beans undergo a precise 3-day anaerobic natural process, which creates a balanced and refined flavour profile. The shorter anaerobic fermentation gives the coffee a cleaner expression compared to longer processes, where the natural sugars and acids develop in a controlled manner without the influence of oxygen.

Varieties:

This exclusive selection combines three noble coffee varieties: Typica, Catuai and Pache. Together, they form a harmonious composition, with each variety contributing its unique characteristics to the overall taste experience.

Through direct trade, we work directly with Dionicio Aguilar, ensuring fair payment and maintaining high quality standards from plant to cup. This close partnership gives us insight into the entire production process.

Expertly roasted:

The coffee is lightly roasted in small, hand-picked batches on the Danish Aillio Bullet roasting machine. The light roast brings out the beans' inherent qualities and preserves the delicate balance between sweetness, acidity and the complex aromas created by the anaerobic process.
